Delightful rock shrimp salad
- 1 pound cooked, peeled and deveined
rock shrimp , fresh or frozen
- 1 ripe avocado, peeled and sliced
- 1 can (11 ounces) mandarin oranges,
drained
- 1 pound fresh spinach, washed and
torn into 1- inch pieces
- 4 strips bacon, cooked, drained and
crumbled Russian salad dressing
- 1 package (2-3/4 ounces) sliced almonds,
garnish
Thaw rock shrimp if frozen.
Cut large rock shrimp if half. In large
mixing bowl, combine rock shrimp , avocado, orange slices, spinach and bacon.
Toss lightly.
Garnish with sliced almonds.
Serve immediately with salad dressing
on the side
