SOME OF MY RECIPES FOR CAMPING AND HOME
One of my pride and joys that I got for Father's Day this year is a propane fryer. Since we have an army to feed a lot of times, I got the one with the big pot. I can take it camping, or use it outside at home. It's the first time I could just about cook all the french fries at once and not take all night, when we have everyone together.
BEER BATTER
This is a really great batter to fry fish in. Also good for veggies like onion rings, cauliflower and mushrooms and makes a mean fried chicken.
- 1 cup Flour
- 1/2 tsp Salt
- 1/8 tsp Pepper
- 3/4 cup Beer
1. Combine dry ingrediants
2. Gradually stir in beer
3. Beat until smooth
This is the basic receipe, just double or triple it if you have a lot of items to batter.
BATTER FRIED FISH
Nothing is better than fish fried in beer batter. Use whole catfish, or fillets of any type of fish.
- corn oil for deep fat frying
- fish
- 1/2 cup white cornmeal(or more, depending on the amount of fish)
- salt to taste
- Pepper
- lemon wedges
- hushpuppies
1. heat oil for the deep frying
2. rinse fish and drain
3. salt and pepper each piece
4. roll in corn meal, then dip in batter,let excess drip off
5. Drop the fish in oil and let cook, filets about 5 to 10 minutes, whole catfish about 20 minutes, depending on size.
6. serve with lemon wedges and hushpuppies
HUSH PUPPIES
These little devils really set off a fish meal. When making them, let your imagination run wild to your taste. This is the basic recipe, but you can add other items, like minced Jalepenos.
- 2 cups sifted fine, stone or water ground white corn meal
- 1 tablespoon sugar
- 3/4 tablespoon baking soda
- 2 teaspoons salt
- 1 tablespoon minced yellow onion
- 1 egg
- 1 cup buttermilk
- 4-5 tablespoons cold water
1. Stir corn meal, sugar, soda and salt together.
2. Place onion in a small boal. Add egg, buttermilk and beat until frothy.
3. Pour all at once into the meal and stir lightly to mix.
4. Add just enough of the cold water to make dough a good dropping.
5 Fry in deep fat fryer for about 2 minutes or until evenly browned.
Makes about 2 dozen
HAMBURGER STEAK WITH THE FIXIN'S
Here's a quick, easy one step meal that starts by having hot coals in your fire. You can put this down in the coals, turning frequently or on the grill grid.
- approx. 8 oz hamburger shaped into a good thick patty
- one potato (peeled or unpeeled) cut up into eights
- one to two carrots
- onion (as much as you like)
1. Make the patty and put into a double layer of foil.
2. Cut up the potato, carrot and onion and put on top of steak.
3. season to taste
4. Wrap all up tight in foil and place in coals, or on grid, turning frequently. Takes about 10 to 20 minutes.
