Tim Adams is a man on a mission and is already amongst the very top echelon of Australia's winemakers. Tim is very serious about his viticulture and winemaking and his wines which have already been very good since his first vintage in 1985 seem to be getting better with each year. Tim has a long connection with the Clare Valley and spent a number of years working with valley legend the late Mick Knappstein, and his nephew Tim, at Stanley Leasingham. He and partner Pam Goldsack run an excellent cellar door and also serve bistro lunches on weekends and public holidays. Tim's Aberfeldy Shiraz is definitely in the top rung of this variety in Australia and his Botrytis Semillon is a classy wine indeed with the sweetness varying with the conditions of the vintage. This is a winery where one should spend a little time and taste all the wines as there is sure to be more than one that suits your palate.
