Asian Rice Noodle Salad

Ingredients
8 oz medium-thick rice noodles
1 1/2 cups chopped snow peas
1 1/2 cups chopped sweet red pepper
½ cup chopped green onion
1/3 cup chopped fresh coriander
1/4 cup chopped peanuts

Dressing
1/3 cup light coconut milk
2 tbsp natural peanut butter
1 1/2 tbsp soy sauce
1 1/2 tbsp rice wine vinegar
2 tsp sesame oil
2 tsp toasted sesame seeds
1 tsp minced garlic
1/2 tsp minced ginger root
1/4 - 1/2 tsp (or to taste) Asian hot chili paste

Method
1. Cook noodles in boiling water until just tender. Drain and rinse with cold water. Place in bowl.
2. Add vegetables, coriander and peanuts.
3. In a small bowl whisk dressing ingredients until smooth. Pour over salad.
