Butter Tart Muffins Mixture One 1 1/2 cups raisins 3/4 cup sugar 1/2 cup butter - in chunks 2 well beaten eggs 1/2 cup milk 1 tsp. vanilla - I sometimes use rum extract instead for a different flavor. Mixture 2 1 1/2 cups flour 2 tsp. baking powder 1 tsp. baking soda pinch of salt 1/2 cup chopped pecans Cook mixture one in a medium size sauce pan - on the stove until thick and beginning to bubble. Refrigerate. Mix mixture two. Mix two mixtures together and bake in the oven in muffin tins. Bake at 375 for 15-18 minutes. Drizzle corn syrup over each muffin. Enjoy! Back to index |
