Carrot Cake

2 cups flour
2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 cups finely shredded carrot
1 cup oil
4 eggs

In bowl combine flour, sugar, baking powder, baking soda and cinnamon. Add carrot, oil and eggs. Beat with mixer till combined. Pour into 2 greased and floured 9" round pans. Bake at 350 for 30-35 minutes till a toothpicker tester comes out clean. Cool on racks in pans 10 minutes, then remove from pans and cool throughly on racks.
You can also do this in one 13x9" pan, same baking time.

Cream Cheese Frosting

6 oz. cream cheese
1/2 cup butter, softened
2 tsp. vanilla
4 1/2 cups icing sugar

Beat together cream cheese, butter and vanilla till fluffy. Gradually add 2 cups sugar, beating well.Gradually beat in enough remaining sugar to make of spreading consistency.
