Sour Cream Coffee Cake

1 Cup sour cream
1 tsp baking soda
1/2 cup butter
1 cup white sugar
2 eggs beaten
1 tsp vanilla
1 3/4 cups flour
2 tsp baking powder

topping 1/2 cup brown sugar
2 apples sliced
2 tsp cinnamon, 1 tsp nutmeg

INSTRUCTIONS
Mix together the sour cream and soda in a bowl and let stand
15 to 20 minutes, until it doubles in volume. Blend butter and
sugar, add eggs and vanilla, beat well. Sift dry ingredients
together. Add Sifted dry ingredients and sour cream alternately
until all is used. Spread in a greased 8 or 9 inch prepared
spring form pan. Mix Brown Sugar, Cinnamon & Nutmeg
together then toss apple in mixture. Arrange apple on top of
batter and then sprinkle any remaining from bow. Bake in 350
oven for 45-55 minutes depending on size of pan. When done
run knofe around cake and release spring form and let cook.
This cake is excellent warm and is great the next day if there is
any left.

If you do not like apples you could leave out... you could also
change the fruit, if you have blueberries,cranberries peaches
pears or plums in season they would be great too.
