Couscous with Dried Cranberries and Orange Dressing Ingredients · 1 cup couscous · 1 1/4 cup chicken stock · 1/2 tsp curry powder Dressing · 2 tbsp olive oil · 2 tbsp orange juice concentrate · 2 tsp orange rind · 1 tsp crushed garlic · 3 tsp honey · 2 tbsp lemon juice · 1/3 cup dried cranberries · 1/4 cup chopped green onions · 3/4 cup chick peas · 1/3 cup diced red pepper · 1/4 cup chopped fresh basil Method 1. Bring stock and curry powder to boil. Add couscous slowly, cover and remove from heat. Cool for 10 minutes. Fluff with fork. Cool to room temperature. 2. Dressing: Combine oil, orange juice concentrate and rind, garlic, honey and lemon juice. 3. Add cranberries, onions, chickpeas, bell pepper and basil to cooled couscous. Add dressing and mix well.
