Cut beef roast into serving-sized portions. 2. Slice onion and separate into rings. Dice the peeled carrots, dice the celery and slice the peppers into thin strips or circles. Place into bottom of slow cooker. Sprinkle the beef pieces with fresh ground black pepper, minced garlic and the onion soup mix. Place on top of the vegetables. 3. Mix the steak sauce and Worcestershire sauce in a small bowl with about 1/2 cup water and 1/2 cup tomato juice. Pour this over the meat. 4. Makes 6 servings ============================================== Texan Crock-Pot Roast The smell of this pot roast will have even your pickiest eating hungry. 3 lbs brisket, shoulder, or chuck roast 1 teaspoon salt 3/4 lb carrots, peeled, trimmed and chopped 1 large onion, peeled and chopped 1 cup ketchup ½ teaspoon coarse ground black pepper 1/4 cup Worcestershire sauce 1 teaspoon dry mustard 3 cloves garlic, pressed 1/4 cup lemon juice (fresh or reconstituted) Cut brisket into medium size chunks. Sprinkle with salt. Place in carrots and onions in bottom of slow cooker. Place brisket on top. Mix together remaining ingredients and pour on top of brisket. Cover and cook on low for 8 to 10 hours. =========================================== Favorite Beef Stew This classic cooks unattended in the crockpot and freezes beautifully. 1 1/2 pounds stew beef -- cubed 1/4 cup flour 1 1/2 teaspoons salt 1/4 teaspoon pepper 2 tablespoons oil 2 cups hot water 15 ounces tomato sauce 1 each onion -- coarsely chopped 1/2 teaspoon basil 1 each bay leaf 2 each potatoes -- cubed 3 each carrots -- sliced 2 each celery ribs -- sliced Place flour, salt and pepper in a paper bag. Add beef cubes, a few at a time, and shake until coated. Brown meat, in batches, in oil in a large, heavy dutch oven. Place meat cubes in a crockpot as they are browned. Add all remaining ingredients to crockpot, stir, cover and cook on low for 8 to 10 hours. Juice makes an excellent dip. ============================ Eight-Layer Casserole 1/2 pound lean ground beef 2 tablespoons imitation bacon bits 1 small onion, chopped 15 oz can tomato sauce 1/2 cup water 1/2 teaspoon chili powder 1/4 teaspoon salt 1/4 teaspoon ground black pepper 2/3 cup long-grain rice 8 3/4 oz can whole-kernel corn, drained 1/2 cup chopped green bell pepper Crumble ground beef evenly over bottom of a slow cooker. Sprinkle with bacon bits, then onion. In a medium bowl, combine tomato sauce, water, chili powder, salt, and black pepper; pour half over beef and onion layers. Sprinkle rice evenly over top, then corn. Top with remaining tomato sauce mixture, then bell pepper. Cover and cook on LOW about 5 hours or until rice is tender. ========================== Crock Pot Stuffed Peppers ingredients: 6- 8 small green and/or red peppers (tops removed and seeded) 1 10 oz. pkg. frozen corn 1 lb Ground chuck (browned and drained) 1 8 oz. can tomato sauce 1/4 t Salt 1/2 t Garlic salt 1/4 t Pepper 1 c Shredded cheese (I use Cheddar or Swiss) 1/2 t Worcestershire sauce 1/4 c Chopped onion 2 T Ketchup preparation: Wash peppers and drain well. Combine all remaining ingredients except ketchup in mixing bowl. Stir well. Stuff peppers 2/3 full. Pour 3 T water in crock pot. Arrange stuffed peppers in crock pot. Pour ketchup over top of peppers. Cover and cook on low 7 9 hours or high 3 4 hours. ============================= SLOW COOKED MEATLOAF AND POTATOES 2 medium potatoes - peeled and cut into 1" 2 lbs of ground beef 1 large onion finely chopped 1-1/2 cups ketchup - divided 3/4 cup crushed butter flavored crackers (ie ritz) 2 eggs 2 teaspoons salt 1/3 cup firmly packed brown sugar 1/2 teaspoon prepared mustard Place the potatoes in a slow cooker. In a large bowl, combine the beef, onion, 3/4 cup ketchup, cracker crumbs, eggs and salt. Mix weel. Place over the potatoes and pat down to form a loaf. In the same bowl, combine the brown sugar, mustard and the remaining 3/4 cup ketchup, mix well. Spread over top of loaf. Cook on low setting for 6 - 10 hours. Drain excess liquid and serve! ==================================== Sweet and Sour Meatballs over Rice Ingredients: 1 pound lean ground beef 1 egg -- slightly beaten 4 tablespoons cornstarch -- divided 1 teaspoon salt 1/4 teaspoon black pepper 1 tablespoon dried chopped onion 1 tablespoon vegetable oil 3 tablespoons vinegar 1 15 oz can pineapple chunks in juice 1/2 cup sugar 1 tablespoon soy sauce 1 large green bell pepper -- cut into pieces hot cooked rice serves 4 to 5 In a bowl, combine ground beef, egg, 1 tablespoon cornstarch, salt, pepper, and onion. Shape into 1 1/2-inch balls. In a large skillet, lightly brown meatballs in oil. Drain fat from skillet. Transfer meatballs to any size Crock-Pot. Stir together in a small bowl: vinegar, sugar, soy sauce, remaining cornstarch, and green pepper. Pour over meatballs. cover and cook on LOW 6 to 8 hours or on HIGH 2 to 4 hours. In the last 30 minutes of cooking stir in the can of pineapple. Serve over hot cooked rice. Toss all ingredients into crockpot and cook on LOW all day. Serve over corn chips or flour tortillas with lettuce, cheese, tomatoes, sour cream, etc. Serves 10. ========================================== MACARONI AND TOMATO CASSEROLE 2 lb. ground beef 1 C. chopped onion 1 1/2 C. water 1 clove garlic, minced 1/4 C. green bell pepper, chopped 2 (16 oz.) cans tomatoes, chopped 1 C. tomato juice Salt and pepper 1/2 tsp. oregano 2 C. dry macaroni Brown the meat, onion, green pepper, and garlic; drain. Combine tomatoes, juice and the drained meat mixture. Stir in the seasonings. Mix well and place in crockpot and cook on LOW for 6 to 8 hours. Stir in uncooked macaroni and cook 2 to 3 hours more. ------------------------------------------ TERIYAKI STEAK 2 to 2 1/2 lb. boneless steak, cut up in small pieces 1 tsp. ginger 1 T. granulated sugar 2 T. oil 1/2 C. soy sauce 1 garlic clove, crushed Put steak into crockpot. Combine remaining ingredients and pour over steak. Cook on LOW for 4 to 6 hours. Serve over rice. ------------------------------------------ Crockpot Shell Casserole 1 lb. lean ground beef 1 small onion, chopped 1/2 t. salt 1/4 t. garlic powder 1 t. Worcestershire sauce 1/4 C. flour 1 1/4 C. hot water 2 t. beef bouillon granules 2 T. red wine 6-oz. shell shaped pasta 1 (2-oz.) can sliced mushrooms, drained 1 C. sour cream Brown beef in skillet with onion, drain and place in crockpot. Stir in salt, garlic powder, Worcestershire sauce and flour. Add water, bouillon and wine, mix well. Cover and cook on LOW 2-3 hours. Meanwhile, cook pasta according to package and drain. Add cooked pasta, mushrooms and sour cream, stir to mix ingredients in crockpot. Turn control to HIGH and cover and cook an additional 10-15 minutes. ------------------------------------------ Crock Pot Pepsi/Coke Pot Roast Recipe 1 medium sized beef roast any cut 1 can of pepsi or coke 1 16 - 24 oz. jar of picante or salsa sauce 1 package dried onion soup mix Put roast in crock pot and pour the pepsi or coke, picante sauce, and soup mix over the top of the roast. Cook on low for 7-10 hours. ------------------------------------------ Au Jus Beef And Noodles 6 servings 2 pounds stew beef meat 2 (7 ounce) cans sliced mushrooms, undrained 2 cups beef broth 1 (1 ounce) package dry au jus gravy mix Worcestershire sauce to taste Salt, pepper, garlic salt to taste Hot cooked noodles Place stew meat in crockpot. Add beef broth and mushrooms. Add seasonings to taste and sprinkle in au jus gravy mix to taste. Cover; cook on LOW for 7 to 8 hours. Serve over hot cooked noodles. NOTE: Store any leftover gravy mix in a cool, dry place in an airtight container. ------------------------------------------ Magic Crockpot Meat Loaf 2 pounds ground beef 2 eggs 2/3 cup quick-cooking oats 1 envelope dry onion soup mix 1/2 cup catsup Reserve 2 tablespoons catsup. Combine ground beef, eggs, oats, soup mix and remaining catsup. Shape into a loaf. Place in crockpot. Top with remaining catsup. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours. ------------------------------------------ Lazy Beef Stroganoff 1 pound beef stew meat 1 envelope onion soup mix 1 can cream of mushroom soup 1 can cream of celery soup 8 ounces sour cream Mix stew meat, soup mix and soups in crockpot and cook on LOW for 8 hours. Just before serving, add sour cream. Serve over noodles or rice. ------------------------------------------ No Peek Beef Casserole 2 pounds stew meat, cut into 1-inch cubes 1 envelope onion soup mix 1 can cream of mushroom soup 1 (4 ounce) can mushrooms, drained 1/2 cup red wine or beef broth 1/2 cup sour cream Combine all ingredients except sour cream. Stir together well. Add to crockpot. Cover and cook on LOW for 8 to 12 hours or on HIGH for 5 to 6 hours. At the end of cooking, stir in sour cream. Serve over noodles or rice. ------------------------------------------ Boogie Woogie Beef 1 (10 3/4 ounce) can cream of mushroom soup 1/2 cup red wine 1 envelope Lipton beefy onion soup mix 1/2 teaspoon dried thyme 2 pounds stew beef 8 ounces fresh mushrooms, sliced 8 ounces baby carrots Mix cream of mushroom soup, wine, beefy onion soup mix and dried thyme in crockpot. Add meat, carrots, and mushrooms; and stir. Cook on HIGH for 4 hours, then on LOW for 4 hours, or just cook on LOW for about 8 to 10 hours. Serves 4. ------------------------------------------ Corned Beef and Cabbage 2 (3 pound) or more corned beef briskets (if you buy the already-seasoned type, do not add the next 3 ingredients) 1/2 cup chopped onion 2 cloves garlic 2 bay leaves 1 head cabbage, cut into wedges 3 cubed potatoes 3 sliced carrots Place corned beef in crockpot. Barely cover with water. Add onion, garlic and bay leaves (if needed). Cover and cook on LOW for 10 to 12 hours. Use one brisket for dinner. Save the other brisket to make Reuben Sandwiches. ------------------------------------------ Drunken Garlic Pot Roast 1 (2 1/2 pound) boneless beef chuck roast, trimmed of fat 2 tablespoons vegetable oil, divided 1/2 teaspoon salt 1/4 teaspoon pepper 2 medium onions, thinly sliced 24 cloves garlic, minced (about 4 tablespoon) 2 beef bouillon cubes 1/2 cup hot water 1 cup lager beer 3 tablespoons brown sugar 1 tablespoon Dijon mustard 1 tablespoon cider vinegar Cornstarch dissolved in water, for gravy In a large skillet, heat 1 tablespoon of the oil and brown roast on both sides, seasoning with salt and pepper; remove to a platter and keep warm. Add the remaining tablespoon oil to the pan and add the onions. Cook until they just start to wilt, then add the garlic. Cook until the onions are tender, a few minutes more. Add the bouillon cubes to the hot water and stir to dissolve; add to the skillet along with the beer, brown sugar and vinegar; stir to mix well. Pour mixture into a crockpot. Place roast on top of liquid, cutting into pieces if it doesn't lay flat. Cook on LOW for 7 to 8 hours. Remove meat from crockpot and pour liquid into a saucepan; heat to a boil, and mix a slurry out of the cornstarch and water; thicken pan liquid with slurry to make a gravy. Serve gravy over meat with potatoes or noodles. ------------------------------------------ Swiss Steak with Tomato Gravy 1 large slice round steak 1/2 cup vegetable oil 2 large cans tomatoes 1 cup all-purpose flour 1 large onion, diced Salt and pepper 1 cup water (for gravy) Spray crockpot with Pam. Turn on LOW. Heat oil in large skillet. Cut round steak in serving-size pieces. Put flour into a shallow pan. Add salt and pepper to flour and flour steak well. Fry steak in hot oil until brown. Pour a few tomatoes into the crockpot. Add pieces of browned steak and remaining tomatoes in layers. Add diced onion. Cook for 4 hours on LOW heat. Remove meat. Put 1 cup of water in a pint jar. Add 3 tablespoons flour. Shake well. Add to tomato mixture in the crockpot. Cook and stir until gravy is thickened. Put meat back in long enough to heat.
