Alta's Hearty Italian Soup 2 tablesppons olive oil 1 pound x lean ground beef (use what ever you have) 1 package (8oz ones) fresh mushrooms sliced thickly 1 large onion (I used 1/2 spanish onion) chopped 1 shallot chopped 3 cloves garlic minced (or 1 tablesppon pureed garlic from the jar) 2 sweet yellow peppers chopped 2 zuccinis halved and then sliced 2 teaspoons italian seasoning 1 teaspoon Worchester sauce 1 large can chopped tomatoes 2 cans tomato condensed soup + 2 can fulls of water salt and pepper to taste Set your stove top burner to medium and palce a large pot on it, add the olive oil. Add the onions, shallot, garlic and brown for about 5 minutes, then add the yellow peppers and mushrooms, brown for another few minutes. Add the ground beef, spices and worchester sauce and cook till the ground beef is completely cooked. Add the 2 cans of tomato soup, the 2 can fulls of water, the canned tomatoes and stir. Add the sliced up zuccinis and the salt and pepper to taste and let simmer on low on the stove top with the cover on for about an hour or more. Ingredients: 1 pound extra-lean (or lean) ground beef 1 egg, lightly beaten 1/2 cup dry bread crumbs 2 tablespoon grated Parmesan cheese 1 teaspoon dried basil (or oregeno or any italian spice) 1 teaspoon onion powder 10 cups (or more) chicken broth 1 package spinache chopped (a box in the frozen foods sect) 1 1/2 cups uncooked orzo pasta Directions: 1. In medium bowl, combine meat, egg, bread crumbs, cheese, basil and onion powder; shape into 3/4 inch balls. 2. In large saucepan, heat broth to boiling; stir in spinache, orzo pasta and meatballs. Return to boil, then reduce heat to medium. Cook at slow boil for 10 minutes, or until pasta is al dente. Stir frequently to prevent sticking. Back to index |
