Crock Pot Beef Dip

Two simple ingredients...
One frozen beef roast (any cut will do)
4 cups of beef stock.

Put both ingredients into the crock pot and let simmer all day on low.

Remove meat, slice thinly and layer on toasted torpedo buns.
Ladle beef juices into small dipping bowls and serve alongside the beef buns.
Add a salad and you have a wonderful, quick family meal.

Baked Beans-Crockpot Style

Here is just one of my favourite slow cooker/crockpot recipies,
it is from the Toronto Star January 2000

1 lbs or about 2 1/4 cups dried navy or white pea beans
1 large onion chopped
5 cups water
1/2 cup ketchup
1/3 cup molasses
1/3 cup dark brown sugar
1 tsp dry mustard
1 tsp salt
1/4 tsp pepper

Soak 2 1/4 cups of beans over night in water then drain water
off. Note beans will swell while soaking.

In slow cooker, combine beans, onion and water. Stir, cover
and cook on high 4 to 5 hours or 8 to 10 hours on low,
until beans are tender.
In a bowl, combine ketchup, molasses,brown sugar, mustard,
salt and pepper. Stir into beans, cover and cook on high 1 to 3
hours until beans are tender and have absorbed most of the
liquid. Season to taste with salt and pepper.
makes 6 to 8 cups. I sometimes will put them in a pot and
simmer them on the stove if I am in a little bit of a hurry at the end.

What I also do sometimes is when I first put them in I put cut
up bacon in with them(just a few slices is enough) or if I
happen to have some ham or a ham bone I also put it in it
really adds to it. I am actually going to make these this week.

sweet and sour ribs

3-4 lbs. ribs
1 can 20 oz. pineapple tidbits, undrained
2 cans. 8 oz each tomato sauce
1/2 c. sliced onion
1/2 c. thinly sliced green pepper
1/2 c. brown sugar
1/4 c. cider vinegar
1/4 c. tomato paste
1 garlic clove, minced
salt and pepper to taste

Place ribs in ungreased slow cooker, in a bowl, combine remaining ingredients and pour over ribs,
cover and cook on low for 8-10 hours until meat is tender
.Thicken sauce if desired.
8 servings...

Beef Barbeque

1 boneless chick roast(3lbs)
1 c. bbq sauce
1/2 c. apricot preserves
1/3 c. chopped green or sweet red pepper
1 small onion, chopped
2 tsp.brown sugar
12 sandwich rolls, split

Cut the roast into quarters.place in crockpot.In bowl, combine bbq sauce, preserves, gren pepper, inon and brown sugar, pour over roast...cover and cook on low for 6-8 hours until meat is tender...remove roast and thinly slice,return meat to cooker and stir gently.Cover and cook 20-30 mins longer, skim fat from sauce. serve beef and sauce on rolls.

Chicken & Apricots

Hi All,
Here is another one of my favs, this is something I came up with myself
so you can adjust the rice and chicken to suit your family needs.
I find that this serves 3 with some left over.

2 pounds of Chicken Thighs skin removed - or 4 chicken breads skin removed
1 package of onion soup mix
1 cup of dried apricots
cut into fours

place chicken, apricots into crockpot, pour onion soup mix into a cup of water then pour into pot,
add more water until mixture is just covered. Cook on low for 8-10 hours or high 4-6 hours
or until chicken is just about done. Add 1 cup of rice and cook until rice is done -
NOTE rice will soak up all or most of the liquid.

Crockpot Bread Pudding

This is so easy and a nice sweet after-dinner treat. :)

Crockpot Bread Pudding

3 eggs beaten
3½ cups milk
2 tsp vanilla extract
2 tsp cinnamon
½ tsp salt
3 cups bread cubes (or plain crumbs)

¾ cup packed brown sugar
½ cup raisins

Mix all ingredients together til bread is thoroughly wet. Place mixture into GREASED crockpot.
Cook on HIGH for 3-4 hours (or until a knife through centre comes out clean).

Quick chilli.

This is a very quick recipe, but a family favorate..

2 cans of manwich
1 large can tomatoes(whole)
1TO11/2 pounds ground beef
1 can red kidneybeans drained
chilli powder to taste,

Brown beef, then add all other ingredents. The longer it cooks the better it gets.
It is great the next day.. enjoy

Chicken stroganoff

4-6 chicken thighs (bone-in)
1 cup sour cream
1 can condensed cr. of mushroom soup
salt, pepper and paprika

Place the chicken in the slow cooker. Combine the sour cream and soup and mix
until completely blended. Pour over chicken and spread so that the chicken is evenly
(and completely) covered. Sprinkle with salt, pepper and paprika.

Cook on LOW for 4-5 hours.

Cola chicken (or beef)

1 1/2 to 2 pounds chicken breast or stewing beef im cubes or strips
1 cup cola (we use pepsi- diet doesn't work as well)
1 cup ketchup
handful of favorite veggies
hot cooked rice or noodles

Pretty easy, you take the chicken or beef and place on the bottom of the crockpot
(if you want you can toss them in flour with seasoning for extra flavor).
Add handful of veggies (either fresh of frozen -we like corn, peas and mushrooms)
Mix cola and ketchup together and pour over meat.
Cook on low for 6-8 hours or on stovetop until meat is cooked and tender.
Serve with hot cooked rice or noodles.
Serves 4-6 depending on how much meat you use.

Gingerale Ham

One ham (either a cottage roll or a bone-in ham)
Gingerale

Put the ham in the crockpot, pour in the gingerale until about an inch from the top of the pot.
Simmer on low for 6 to 8 hours. Serve with Scalloped potatoes.
This is definitely my kids favourite ham!

Chicken Bonne Femme WW recipe

Chicken Bonne Femme....Weight Watchers
1-3 lb chicken cut into 8 pieces
2 cups frozen baby onions
2 cups whole baby carrots
1/2 lb new or red potatoes, cur into 1" chunks
1 1/2 cups low sodium chicken broth
2 medium celery ribs, cut into 2" pieces
2 strips turkey bacon, diced
bay leaf
1/4 tsp dried thyme
1/4 tsp black pepper
1/4 cup minced fresh parsley
2 tbsp fresh tarragon or mint, minced
1 2" strip lemon zest, minced
2 tbsp fresh lemon juice
1/2 tsp salt

In slow cooker, combine chicken, onions, carrots, broth, celery, bacon, bay leaf, thyme and pepper. cook on Low 8-10 hours. Meanwhile, in small bowl, combine parsley, tarragon, lemon zest and juice.
Set aside. With slotted spoon, remove chicken and vegetables to heated platter.
Cover with foil and keep warm. Skim off and discard any fat from liquid in crockpot.
Stir in parsley mixture and salt, spoon over chicken and vegetables.

Chicken and Rice Casserole

Chicken and Rice Casserole
1 10.75 oz can cream of celery soup
2 halves chicken breasts -- skinned & boned
1 2 oz can sliced mushrooms -- undrained
1 envelope dry onion soup mix
1/2 cup Uncle Ben's converted rice -- uncooked

Combine the soup, mushrooms and rice in a well greased slow cooker.
Stir well. Lay the chicken breasts on top of the mixture.
Sprinkle the onion soup mix over all. Cover. Cook on LOW for 7 to 9 hours. Serve hot

Crockpot Pizza Casserole

Crock Pot Pizza Casserole
1 1/2 pounds lean ground beef
2 medium onions -- chopped
2/3 16 oz pkg rigatoni, -- cooked
2 cans pizza sauce
2 pounds shredded mozzarella cheese
1 package pepperoni
mushrooms

In a skillet, brown and crumble meat along with onions.
Layer ingredients in crock pot in the order given.
Cook low for 5 hours. Makes a full pot.

Crockpot Taco Casserole

Crock Pot Taco Casserole
1 pound ground meat
1 medium onion -- chopped
1 clove garlic -- minced
1/2 cup green pepper -- chopped
2 drops Tabasco sauce
1 15 ounce can tomato sauce
1 teaspoon chili powder
1 cup frozen corn
32 ounces chili with beans (hormel or other)
3/4 pound grated cheese
Nacho cheese tortilla chips

Brown hamburger and drain. Add onion, garlic and pepper and cook until transparent.
Add remaining Tabasco, tomato sauce, and chili powder.
Grease crock pot and layer in 5 layers,
beginning with meat mixture and nacho cheese tortilla chips. 6-8 hours on low.

Crockpot Black Forest Roast

Black Forest Pot Roast

3 1/2 lb boneless chuck or round roast
1 chopped onion
1/4 cup water
1 can drained mushrooms or 1 pkg fresh sliced
1/4 cup ketchup
1/4 cup red wine
2 tbsp Dijon mustard (prepared)
1 tbsp Worcestershire Sauce
1/2 tsp salt
1/8 tsp pepper
1 clove garlic, crushed
2 tbsp cornstarch
3 tbsp water

Trim all fat from meat. Place in crockpot.
In a small bowl, combine onion, water, mushrooms,
ketchup, wine, nustard, Worcestershire Sauce, salt, pepper and garlic.
Pour mixture over roast. Cover and cook on Low about 8 hours.
Remove meat and slice. Keep meat warm. Turn to High.
Dissolve cornstarch in water, stir int crockpot.
Cover and cook on High 15-20 minutes or until thickened.
Serve sauce with meat.

3lb chuck roast
2 10oz cans of cream of mushroom soup
1 pkg Lipton onion soup mix
1/4 water

Throw all in crock pot and cook on low for 8 hrs.

Cherry Cobbler

Cherry Cobbler

1 can (21 ounces) cherry pie filling
1 cup AP flour
1/4 cup sugar
1/4 cup butter or margarine, melted
1/2 cup milk
1 1/2 tsp baking powder
1/2 tsp almond extract (I use vanilla)
1/4 tsp salt


1. Spray inside of 2 to 3 1/2 quart slow cooker with cooking
spray.

2. Pour pie filling into cooker.

3. Beat remaining ingredients with spoon until smooth.
Spread batter over pie filling.

4. Cover and cook on high heat setting 1 1/2 to 2 hours or until
toothpick inserted in center comes out clean.

I have made this recipe several times and it's delicious. You can
substitute with apple pie filling or any other type of filling.

Usually, it's all gone the same day!

1 lb hamburger cooked and drained 1 head of cabbage chopped to bite sized pieces
1 lrg can of tomato juice
cook in pot all day
add minute rice start with one cup if still runny add more
Enjoy with bread or rolls

My Mom's Baked Beans

3 cups of navy beans-presoak the night before.
Other Ingredients:
Salt Pork-rinse salt off really good,make sure all the salt is removed..
1/4 cup of brown sugar
1 to 2 tbsp dark molasses

Next Step:
Bring beans to a boil in a large pot-with the same water as soaking
-boil until when you blow on them-the skin comes off
- when you blow on them.
Slice rinsed salt pork lay a layer on the bottom of crock pot.
Mix brown sugar and molasses in with the beans-
NOTE: "you may have to pour some of the water out into a reserved bowl"
Pour bean mixture into crock pot-add remaining salt pork -put lid on
-Put on high for first hour-than lower to low heat for remaing of the day.
Great the next day..if any leftovers..

Pepper & Pineapple Pork Stew

Pepper & Pineapple Pork Stew

Yield: 4 servings.

4 loin pork chops, cut into 1" cubes
4 carrots sliced
1/2 cup chicken broth
3 tbsp teriyaki sauce
1 tbsp cornstarch
8-oz can pineapple chunks in juice, drained and juice reserved
1 green bell pepper, cut into 1" pieces.

1. Brown pork cubes in hot skillet,if desired (optional)
2. Mix pork, carrots, brother and teriyaki in slow cooker; cover and cook on low for 7-8 hours.
3. Mix cornstarch with reserved pineapple juice; stir into pork mixture.
4. Stir in pineapple and green pepper.
5. Cover and cook on high 15 minutes or until thickened and bubbly.

Per serving: 250 calories, 720 mg sodium, 65 mg cholesterol, 7 g fat (2 g saturated fat).

I also like to add in a yellow onion in chunks, at the same time as I add the carrots.
Serve this over rice.

Favorite Roast

quarter large onion
3 cups mini carrots
1 cup water
peel and 1/2 potatoes
add to crock pot,

brown roast in nonstick frypan
put on top of water & veggies
sprinkle roast with salt & pepper
spread 1/2 jar (about 5oz) horseradish on top of roast (this is the magic ingredient, don't skip it!)
cover & cook on low for 8-10 hours.

Another Beef Dip Recipe

This one was in the Best Recipes Online cookbook too, for those who are familiar with it - was give to me by a good friend and is so simple:

3-4 lb. lean roast beef
1/2 c. soya sauce
1 beef bouillon cube
1 bay leaf
3/4 tsp. dried thyme
1 tsp. garlic powder
pepper

Place roast in crockpot. Mix ings. together and pour over roast. Add water to almost cover and cook on low for 10-12 hours. Makes for a fork-tender pull apart beef dip which you can serve on rolls and use the au juice just like restaurant-style beef dip.

Altas Crockpot Stew

2 pounds stewing beef
1 1/2 cups flour
tablespoon italian seasoning
1 tspoon garlic powder
1 tspoon onion powder
salt and pepper

- place the flour and all seasonings all in a zip loc bag and then throw the beef into the bag, shake well to coat.

In your pam sprayed (greased anyway you like) crockpot pour the coated beef into the crockpot.

Add to this
5 carrotts or more sliced
1 onion chopped (I love spanish if you use a sweet onion use half a large one)
5 potatoes cut up in small pieces

- place these in the crockpot

1 can mushroom soup plus one can full of water thrown on top of the veggies
1 Large can diced italian (or just plain) tomatos on top of the soup mixture

Cook on low 12 hours or more or you can cook on hifh for as long as you like and then lower to low, in about 2 hours mix all the mixture if you can and then let sit, mmmmmmmmmmmmmmm

Simple and yummy.

CROCKPOT ROAST STICKY CHICKEN


4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme
1 tsp white pepper
1/2 tsp garlic powder
1/2 tsp black pepper
1 large roasting chicken
1 cup chopped onion

In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a resealable plastic bag, seal and refrigerate overnight.

When ready to cook chicken put the onions into the cavity, put the bird into the crockpot and do not add any liquid. As the cooking process goes on it will produce it's own juices. Cook on low 8 to 10 hours and it will be falling off the bone tender.
