Rustic Italian Grape Tart Crust 1 up all purpose flour ¼ cup yellow cornmeal 3 tablespoons granulated sugar ½ teaspoon baking powder ½ teaspoon salt ¼ cup butter, chilled, cut into small pieces 3 tablespoons orange juice prepare flour by combining all dry ingredients well, add butter and combine until resembles a coarse meal. Add orange juice and just blend. Form into a 4” circle and wrap in plastic wrap and chill for 15 minutes. After chilled place 1 teaspoon flour on wax paper and place 4” round on it, cover with 1 teaspoon flour and more wax paper and roll into a rough round crust and place on cookie sheet. Filling (can also be cooked as a crisp if you negate the crust and put a crisp topping on them!) 2 ¼ cups seedless red grapes 2 ¼ cups seedless black grapes 2 tablespoons granulated sugar 1 tablespoon corn starch ¼ teaspoon vanilla extract( I add more because I like vanilla) ¼ teaspoon ground cinnamon ( I also add more cinnamon!) Mix all ingredients together until grapes are coated evenly and pour into roughly formed crust. Roll the crust up and over the grapes, leaving the enter area open. Brush folded over crust with 1 teaspoon water mixed with 1 egg yolk. Sprinkle with turbinado sugar, or regular sugar Bake at 400 degrees for 25 minutes or until crust is golden brown… This recipe doesn’t need whipped cream, ice cream or anything and has a wonderful fresh light flavor! Both of these recipes are favorites of dave and me!!!!! |
