Kathy's ICE CREAM SANDWICHES


1/2cup shortening 1/3 cup unsweetened cocoa
1 cup sugar 1/2 teaspoon baking soda
1 egg 1/2 teaspoon salt
1 teaspoon vanilla 1/4 cup milk
11/2 cups plus 2 tablespoon flour Ice Cream (any flavor)

Combine shortening, sugar, egg and vanilla in large bowl until blended
well.  Combine flour, cocoa, baking soda and salt; add alternately with
milk to sugar mixture until ingredients are will blended.  Cover and
chill 1 hour.

Drop heaping tablespoon onto ungreased cookie sheet.  With bottom of
glass, flatten each cookie into a 23/4 inch circle about 1/4 inch thick.
Bake at 375 degrees for 8 to 10 minutes or until almost set.  Cool.

Place scoop of softened ice cream on one side of cookie spread evenly.
Top with another cookie.  Wrap immediately place in freezer.  Freeze
until firm.

Note:  For fun I roll each cookie (along the ice cream side) with colored
jimmies.  The kids love it!
