CHILI RELLENO

INGREDIENTS

4 ounces of either Monterey Jack, Mozzarella, or Asadero cheese.
4 whole green chilies, seeded
2 eggs, separated (save yolks)
1 whole egg

1/4 cup milk
4 tablespoons flour (reserve 2 tablespoons)

PREPARATION

1.) Slice cheese into 1 inch strips and stuff into Chili Peppers
2.) Whip egg whites till peaks form and set aside
3.)
Beat egg yolks, whole egg, milk, and 2 tablespoons of flour till mixed
4.) Carefully fold in egg whites
5.) Dip chili peppers in flour, then egg mix, before placing in non stick baking pan.
6.) Saute chili peppers in a large frying pan till egg coating is golden.

7.) Pour balance of egg mixture over Chili Peppers and bake in preheated oven at
     375 for 40 minutes
