Hot Chicken Salad
- 4 cups boiled chicken, chopped (1 whole chicken, boiled and deboned)
- 1 cup chopped celery
- 4 hard boiled eggs, chopped
- 1 can cream of chicken soup
- 2 tablespoons lemon juice
- 1/4 cup chopped onion
- 1 jar pimentos
- 3/4 cup mayonnaise
- 1 cup shredded cheese (Colby or Cheddar)
- 2 cups crushed potato chips
- 2/3 cup toasted almonds (optional)
Instructions:
Mix first 9 ingredients together, pour into casserole. Spread cheese on top, then potato chips, then almonds. Bake at 350 degrees for 45 minutes.
