|  Tomato soup
Serves 3-4
 
 Ingredients
 
(14oz) can of tomatoes 1 medium-sized  potato
 1 onion
 1 carrot
 500ml/1pt  water
 Salt and pepper
 1 chicken stock cube
 Chopped parsley
 MethodPeel and chop the potato, onion, and carrot. Put them in a pan with the tomatoes. water, stock cube, salt, and pepper
 Stir to dissolve the stock cube, then simmer gently with the lid on for about 20 minutes until veg. is soft
 liquidize the soup (or sieve). Check the seasoning. Reheat if necessary
 Serve in a warm soup tureen, sprinkled with chopped parsley
