What a great page! I was introduced to Cajun Food from Emril's Lagasse's book Loisiansa Real and Rustic. There he talks about alot of Cajun history. Additionally he gives recipe for a Cajun 'RUB' that I've been using on Catfish, Chicken and just about eve ything else. I've also made my first 'rue'. I wish I could get my hands on some Crawfish. Love Ya.. Great page.. someday, I'd love to come to New Orleans!

First let me say, I like your webpage. I like the history; and, the old pictures. I also think that your bars are very original. OTOH, you said constructive criticism: you have saved your photos as .gifs which make them much larger files and slow to load. Some of them have also apparently been saved as transparent .gifs which make the background bleed into the photo. Save your photos as .jpgs. Do away with that background .gif. It makes the text oo hard to read and increases download time. Choose contrasting colors for your background and text. Also make the text bold. It will make what you say, a lot easier to read. Also I would recopy the script on your second webring because something is wrong there.
