WILLIAMSBURG EGG NOG
 
6 Eggs
2 Cups Heavy Cream
1 Cup Milk
3/4 - 1 Cup Sugar
1 Tblsp Nutmeg
1/2 Cup Rum
1/2 Cup Brandy
1/2 Cup Whisky
 
Separate egg yolks from whites.  Set the whites aside.  Mix yolks well, gradually adding the cream, milk and sugar.  Whip eggs whites until "soft peaks" form.  Fold the whites into the rest of the mix.  Gradually add the alcohol.  Nutmeg may be added while mixing or sprinkled on the top when serving.
 
Tastes best if "aged" in the refrigerator uncovered for about 2 hours.
 
GLOGG
This Scandinavian spiced wine is just the thing to take the chill off of a cold winter night!  It is best served hot in cups with almonds and raisins added to each serving.
 
1/2 Cup golden Raisins
1/3 Cup Sugar
1/4 Cup blanched Almonds
12 cloves
6 Cardamon pods
2 Sticks Cinnamon
2 Pieces Orange Peel
1 1/3 Cup Water
3 Cups Dry Red Wine
3 Cups Tawny Port
1 1/2 Cup Brandy
 
 
Combine all of the non-alcoholic ingredients in a heavy saucepan.  Bring to a boil and simmer for 5 minutes.  Add the red wine and the port, bring to a boil again.  Remove from the heat and let steep, covered, for at least 2 hours.  Then bring back to a simmer, add the brandy and re-heat for one minute. 
 
Serve warm in an "Irish Coffe" cup. 
HEALTHY EGG NOG
(Alcohol Optional)
6 servings
 
1/2 Cup Egg Substitute
3 Tblsp Sugar
13 ounce Skimmed Condensed Milk
1/4 cup Skimmed Milk
1 Tsp Vanilla
1 Tsp Rum flavoring (or 3 ounces of rum)
Nutmeg
 
Whip egg substitute and sugar together.  Combine with the condensed and skimmed milk, vanilla and rum or rum flavoring.  Mix well.  Chill over night.  Sprinkle with nutmeg prior to serving.
ALMOND CHOCOLATE COFFEE
 
3/4 oz Amaretto
1/2 oz Dark Creme de cacao
8 oz hot coffee
 
Pour in order into coffee cup. Top with whipped creme and chocolate shavings.
 
WASSAIL (Non-Alcoholic)
 
This originaes from the Norse "ves heil," (be in good health). 
 
1 Gallon Apple Juice or Cider
2 Oranges
2 Lemons
1 Lime
1 Tblsp Cloves
1 Tblsp Allspice
2 Sticks Cinnamon
1 Quart Water
1 Cup Sugar
 
Heat water to boiling. Cut the citrus fruit in half and squeeze the juice into a separate bowl; save.  Place skins and pulp into the boiling water.  Add the spices and simmer for one hour.  Remove the cinnamon sticks, a few cloves and allspice; Save to one side (to be re-added to the liquid)  Using a slotted spoon or strainer, remove the citrus peels and pulp and the remaining spices; discard these rinds and spices. Return the cinnamon sticks and saved spices to the water.  Add the apple juice (or cider) and return to the heat.  When boiling remove from the heat and add the citrus juice and sugar.  Simmer very lightly for another 10 minutes and serve warm.

HOT BUTTERED RUM
 
1 tsp sugar
1/2 tsp butter
1 jigger light or dark rum
4 cloves
 
Put sugar, butter, rum and cloves in a mug.  Fill with boiling water.  Stir
 
RUDOLF THE RED-NOSED REINDEER
 
1 1/4 ounce light rum
1 1/2 ounce lemon juice
1/2 ounce Grenadine
Ice cubes
Cranberry juice
Lemon wedge
 
Mix the light rum, lemon juice and grenadine in a festive glass.  Add ice cubes and fill to your own taste with cranberry juice.  Garnish with lemon wedge.
 
 
Hot Chocolate
 
12 oz fine chocolate
1 tsp butter (do not use margarine)
1/2 tsp vanilla
1 cup Half and Half or Whole Milk
Mini Marshmallows
 
Melt the chocolate, butter and vanilla in a double boiler.  When just smooth, stir in the milk.
Serve in small mugs.  Top with freshly whipped cream and mini marshmallows.

MULLED WINE
 
Mulled beverages are warm beverages with herbs, spices, fruit and sugar added.
 
3 Cups Water
1 Cup Sugar
12 Cloves
2 Cinnamon Sticks
1 Lemon Peel
1 Bottle Red Wine
1/4 Cup Brandy
 
Simmer the water, sugar, cloves, cinnamon sticks and lemon peel for 10 minutes.  Add the wine and re-heat.  Do Not Boil!  Add the Brandy and serve.
 
BISP
The name "Bisp" is Norwegian for "bishop" and this beverage gets its name from the red color of the bishop's cape.
 
1 Stick Vanilla
2 Sticks Cinnamon
12 Whole Black Pepper
10 Tbslp Sugar
1 Cup Alcohol
1 Bottle Red Wine
1 Bottle Water
 
Simmer sugar, water and spices for two hours.  Strain. Add wine and alcohol.  Serve

FRIENDS DON'T LET FRIENDS GO OUT IN THE COLD AFTER THEY HAVE BEEN DRINKING
Initially alcohol will provide you with a warm feeling -- a warming sensation to a cold body.  Actually, alcohol causes the peripheral vessels to dilate.  Blood rushing through these vessels radiates heat away from the body, moving the natural body warmth from vital organs.  This greatly increases the risk of hypothermia.

Drinking also interfers with good judgment.  It may cause you to become careless in the cold weather.
