Shrimp and Merliton dressing is my favorite food for the holidays. Folks I fix this dish without measuring anything. So I will do my best with these instructions.
Shrimp and Merliton
Dressing
8 to 10 med. merlitons, boiled and mashed
2 med. onions, chopped
1 cup celery, chopped
1/4 cup cornola oil
2 lbs. chopped raw shrimp, (cleaned & deveined)
2 1/2 cups of seasoned bread crumbs
I stick of butter
Salt and pepper to taste
9"x13" baking pan
Preheat oven to 350°F.
Boil merlitons for about 1 hour. Peal, remove seed,
chop, (I use food proccessor) and set aside. In a
pot, put oil, chopped celery, onions. Saute these
until onions are transparent (tender). Add chopped
raw shrimp and merlitons, cook for about 30 minutes.
Season to taste. Add 2 cups of seasoned bread crumbs
and mix well. Pour into baking pan sprayed with Pam.
Top with 1/2 cup of bread crumbs, butter (cubed)
and bake for 45 mins. to 1 hour.
(Can be made ahead of time and frozen until
ready to bake).
Serves 8 to 10.
You can add bell peppers to this recipe, but my
daughter doesn't like them. So I just omit it. I
make 3 pans of this at one time so I don't have as
much to do when Christmas rolls around. Of course
my daughter, my in-laws, and son takes some home
with them. Try this and "Enjoy".
