
Ingredients
3 cups mashed sweet potatoes (yams)
or 4 large sweet potatoes
1 sm. can of crushed pineapple (optional)
1 cup butter
3 cups white sugar
3 egg yolks
1/2 can condensed milk
1/2 cup evaporated milk (cream)
1 tsp vanilla extract
1/2tsp apple pie spice
1 (9 inch deep dish) pie shell
Directions
1) Preheat oven to 350 degrees F
Boil or microwave potatoes in their
skin until softened.
2) Mash hot potatoes, should equal
3 cups, and add butter. When butter
is melted, add sugar and then egg
yolks one at a time. Mix thoroughly
after each addition. Add evaporated
milk, condensed milk,apple pie spice,
crushed pineapple and vanilla.
3) When mixed completely, pour into
pie shell.
Praline Topping
1 cup coarsely chopped pecans
1/2 cup packed brown sugar
2 Tbs. Butter
In a small bowl combine all three ingredients,
mix until it is crumbly. Sprinkle over top of
pie.
Put pie in preheated oven and bake 50 minutes.
Makes 1 - 9 inch pie
