Black Bean Soup



1 lb. black beans.
1/4 cup, olive oil.
3 buttons, garlic.
4 strips, bacon.
1 Tbsp. vinegar.
1 large can, crushed tomatoes.(can add for added flavor)
1/2 tsp. soda.
3 onions.
1/2 bell pepper.
2 bay leaves.
salt to taste.
pepper to taste.

Add soda to beans and soak overnight. Wash beans well the next morning. Put beans in 2 quarts of cold water and boil slowly. Cut up onions, garlic, bell pepper and bacon, and add bay leaves; put into frying pan with olive oil and fry until light brown. Add this mixture together with vinegar, to the beans and cook slowly until done. Season to taste. Serves 8.
Beans should set about an hour or 2 before eating...Reheat... Serve with side dishes of rice and chopped onions.
