CARROT FRUITCAKE
1 cup grated carrots
3/4 cup honey
1 tsp. allspice
1/2 tsp. nutmeg
2 Tbsp. oleo
1 1/2 cup whole wheat flour
1/2 cup wheat germ
Glaze
1 cup raisins
1 tsp. cinnamon
1 tsp. salt
1/4 tsp. cloves
1 1/2 cups water
1 tsp. baking soda
1/2 cup chopped nuts
Preheat oven to 300*. Cook carrots, raisins, honey, spices and margarine in the water 10 minutes, then allow to cool. Mix together flour, baking soda, wheat germ and nuts. Combine with other ingredients. Pour into two small, well greased loaf pans. Bake 45 minutes. Makes 2 small loaves.
GLAZE:
1/3 cup oleo
2 cups powdered sugar
1 tsp. vanilla extract
2 Tbsp. hot water
Heat oleo in saucepan until melted. Stir in powdered sugar (which has been measured and sifted) and vanilla extract.Stir in hot water, 1 tablespoon at a time, until glaze is desired consistency. Drizzle over breads.
