Candied Sweet Potatoes
Boil medium-sized sweet potatoes until tender, but not soft. Allow 1 potato per person. Drain and cool. Peel. Slice lengthwise in halves or to a thickness of 1/3 inch.Butter well a shallow baking pan. Place sliced potatoes flat Barely cover with an uncooked syrup made of brown sugar and water, allowing 1 cup of the sweetening to 1/2 cup water. You can also use honey instead. Dot generously with butter. Bake slowly until most of the syrup has been absorbed and until potayoes are browned and well glazed. Good with pork.
