Chocolate Cake With Fudge Frosting


CAKE:

2 1/2 cups flour
2 tsp. soda
1/2 tsp.salt
1 Tbsp. vinegar
1 cup milk
1 cup margarine, softened
2 cups sugar
2 eggs
1/2 cup cocoa
1 cup hot water
1 tsp. vanilla

FROSTING:

2 Tbsp. cocoa
1 cup sugar
1/3 cup milk
1/4 cup margarine
1/4 tsp. salt
1 tsp. vanilla

Sift together flour, soda and salt. Stir vinegar into milk and set aside. Cream margarine, adding sugar gradually. Add eggs and beat in cocoa. Add flour mixture alternately with milk and vinegar, mixing well. Add hot water and vanilla. Batter will be thin. Pour into greased, floured 9 X 13 inch pan or two 8 inch cake pans. Bake at 350* for 40 to 45 minutes.
Frosting: Combine all but vanilla in saucepan and boil 2 minutes. Add vanilla and beat until thick enough to spread. When making a layer cake, whip 1 cup heavy cream with 2 Tbsp. sugar and spread between layers. Use frosting for top and sides. Serves 10 to 14.
