FLUFFY COCONUT FROSTING


2 unbeaten egg whites
1 1/2 cups sugar
1/4 tsp. cream of tartar
1/2 cup cold water
1 tsp. vanilla
1 cup fresh (or frozen) coconut

Place all ingredients, except vanilla and coconut, in top of double boiler. Beat 1 minute with electric beater at high speed. Place over boiling water and cook, beating constantly until frosting forms stiff peaks, about 7 minutes. Remove from over water. Beat in vanilla; stir in coconut. Frost cake immediately.
