ITALIAN CHICKEN
6 to 8 boneless chicken breasts
5 to 6 large carrots, scraped & chunked
4 to 5 medium potatoes (unpeeled) cut in 1" cubes
salt & pepper to taste
1 cup broccoli flowerets
1 cup cauliflower flowerets
1 medium green pepper, thinly sliced..optional..
1 cup sliced fresh mushrooms
1 cup sliced zucchini..optional..
1 (16 oz.) bottle Zesty italian dressing
Arrange chicken in a well buttered casserole dish. Cover with carrots, then potatoes. Sprinkle with salt & pepper. Pour dressing all over. Cover with foil and bake at 375 deg. for 30 to 40 minutes.Remove from oven; turn chicken and add broccoli and cauliflower. Cover again and bake 30 to 45 minutes more, adding green pepper, mushrooms and zucchini during the final 10 minutes.Serves 6 to 8. EASY>
