Layered Vegetable Salad*


2 to 3 cups fresh spinach, chopped
1 lb. bacon fried and crumbled
6 hard-boiled eggs, sliced
2 to 3 cups lettuce, shredded
1(8 oz.) can water chestnuts, sliced
1(10 oz.) pkg. frozen peas, thawed
1/2 cup green onions
1 cup mayonnaise
1 cup Miracle Whip
1 cup Swiss cheese, grated

Sprinkle spinach and lettuce over bottom of a 2 1/2 quart flat casserole. Top with bacon, eggs, lettuce, water chestnuts, peas and onions. Combine mayonnaise and Miracle Whip; spread over top. Sprinkle with Swiss cheese. Refrigerate at leaste 8 hours before serving. Serves 16. Easy. Must do ahead of time.
