LEMON BARS
Crust:
2 sticks margarine
2 cups flour
1/2 cup confectioners sugar
Filling:
2 cups granulated sugar
4 Tbsp.flour
4 eggs
1/4 tsp. salt
4 Tbsp. lemon juice
Blend Crust ingredients until creamy. Spread in a 9"X13" pan.Bake at 325* for 20 minutes.
Mix Filling ingredients and pour over baked mixture. Bake 25 minutes. Sprinkle with confectioners sugar. Loosen edges while warm. Cool and cut into bars.
Variation: Sprinkle coconut over baked crust before pouring in the filling.
