LEMON DELIGHT CAKE


CAKE:

1 pkg. lemon cake mix
4 eggs
1 cup orange juice
1/2 cup oil
1 pkg. instant lemon pudding

GLAZE:

1 small can frozen orange juice concentrate, thawed
2 cups XX sugar

Blend cake ingredients, then beat at medium speed for 2 minutes. Spread batter in greased, floured 10 inch tube pan. Bake at 350* for 45 minutes.

GLAZE:

Mix juice and sugar. Poke holes in cake with a toothpick. Pour glaze over hot cake and leave in pan until cake cools and glaze is absorbed. Cake should age several hours to a day before serving. Serves 12 to 16. Must do ahead.
