Potato and Carrot Combo


6 medium potatoes
3 bay leaves
4 Tbsp. vegetable oil
1 large onion, chopped
1 1/4 cup water
3 carrots
1 tsp. salt
1 tsp. pepper
1/2 ysp. paprika

Peel and quarter potatoes and carrots. Place in a saucepan with bay leaves and seasonings. Heat oil in frypan and saute onion until brown. Add water and simmer 2 minutes. Pour into saucepan with vegtables and toss together. Cover and simmer 30 to 45 minutes or until vegetables are tender. While cooking, stir occasionally and add a little extra water if vegetables appear to be dry. Remove bay leaves and serve.
