PUMPKIN ROLL




3 Eggs
1 cup Sugar
2/3 cup Pumpkin
1 tsp. baking soda
1/2 tsp. Cinnamon
3/4 cup, all purpose flour

Mix all ingredients. Line a jelly-roll pan with wax paper sprayed with Pam. Pour this mix on top of wax paper, and bake at 350 ° for 15 minutes.
When removed from oven, sprinkle generously with confectioners sugar,turn the Roll onto a towel and sprinkle other side with confectioners sugar. Roll tightly in the towel and let cool at room temperature for at least 1 hour.

8 oz. cream cheese
3 TBSP margarine
1 cup confectioners sugar
3/4 tsp. vanilla flavoring

Mix these ingredients.
Unroll the Pumpkin Roll and spread this mixture evenly on the Roll. Carefully re-roll as tightly as possible, and refrigerate at least 1 hour before slicing.
