RAW APPLE CAKE
2 cups coconut
3 cups raw apples, cubed
2 cups sugar
3 cups all-purpose flour
2 tsp. vanilla
1 1/2 cups Wesson oil
1 cup chopped nuts
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3 eggs, well beaten
Cream sugar and eggs until light. Add oil and vanilla. Mix cinnamon, flour,soda and salt together, then add to mixture. Fold apples, nuts and coconut last. Bake in greased and floured tube pan at 350* until firm, about 1 1/2 hours.
ICING:
1 stick margarine
1 cup brown sugar
1/4 cup evaporated milk
Cook 1 minute and pour over hot cake, margarine, brown sugar and evaporated milk.
