Recipes of the Week Spanish Rice

2 cups of rice
4cups of water
1/8 cup of butter ( 1/2 stick)
4tbs cooking oil
2 cubes of tomato bouillon with chicken flavor(can be substituted with 2tbs tomato paste and 2 cubes/2tsp  of chicken bouillon)
3tbs ground cumin
2tsp MSG
1tbs garlic powder
1/2 tsp ground red pepper
*optional:
diced green peppers
diced green onions
diced tomatoes

Directions:
In a medium saucepan, on medium heat, heat cooking oil
Add butter and stir until melted
Add rice-cook stirring frequently until it starts to brown
Add water, and stir in remaining ingredients, until they are dissolved.
*Add peppers, tomatoes and onions
Coninue to cook on low heat for 20-25 min until rice is fully cooked but not over done.

Peach Cobbler


Crust:
3 cups of all purpose flour (bleached or unbleached)
1/2 cup ( 1 stick) of butter -softened
1/2 tsp salt
2tbs sugar
1/4 cup of milk
1/8 cup of water
Filling:
1-32 oz. can of sliced peaches (drained from syrup)
3tbs nutmeg
2tbs cinnamon
1cup of sugar
1/8 cup of orange juice (or 1tbs lemon juice)
1/2 cup of butter ( 1stick)
1tsp vanilla
1/2 tsp salt
1tbs cornstarch ( or 2Tbs flour)
1tbs water
* optional topping :
tsp each : cinnamon, nutmeg
optional 2tbs sugar
1/8 (1/2 stick) of butter

**for cobbler with a bottom crust, double the recipe for crust. Butter the baking dish and and line the baking dish with a layer of crust , THEN add filling and top with the remaining crust.

Directions:
Prepare Filling- Mix together cornstarch (or flour ?)and water (make sure there are no lumps) and set aside
In a med saucepan, combine other ingredients for filling.
Cook on med heat for 3-5 min, then remove from heat
Stir in cornstarch/flour mixure
Pour into a 4qt baking dish/pan

Prepare Crust-In a large bowl, mix together dry ingredients
Cut in butter with a fork until mixture is crumbly
Mix in water and milk gradually until mixture becomes a soft dough
Knead dough into a ball until it stops sticking to the sides of the bowl
Roll out the dough on a flat surface and cut into strips Piece strips over top of the filling, seal edges by pressing the dough to the edges of the pan.
*optional-Top with cut pieces of butter and sprinkle with cinnamon, sugar and nutmeg

Bake at 350 for 30-40 min until crust is golden brown






                       Lasagne

1-1 lb. package of lasagne noodles
2 cups of crushed tomatoes
4 cups of tomato sauce
1 cup of tomato paste
1 small onion chopped
1 each med green and red bell pepper(chopped)
2 cups of chopped spinach*optional
1/2 lb of Italian sausage
1/2 lb of ground beef
1/2 tsp red pepper flakes
2tbs oregano
1tsp basil
4tbs salt( or seasoned salt)
3 tbs garlic powder
1/2 cup sugar
1 lb ricotta cheese
2lbs of mozarella cheese( grated )
1 lb of cheddar cheese ( grated)


Directions
Prepare noodles according to packaging
In a large skillet, brown meats and combine with peppers, onions and seasonings.

Prepare sauce:
In a saucepan on med-low heat,combine tomatoes, tomatoe sauce, and tomato paste with sugar and stir for 3-4 min.

Assemble:

Cover the bottom of a rectangular pan with sauce, and place noodles lenghth-wise over the sauce.
Spread ricotta cheese over the noodles (about 1/4-1/2 in high)
Top with meat about 1/2 in high
Top with spinach and more ricotta
Repeat this sequence until pan is almost full. The top layer should be noodles on top, then r add more sauce on top of noodles and top with grated cheeses.
