Best Broccolli Soup |
1.Remove flowerettes, peel stems and boil 3-4 minutes. Drain and set aside. 2. Boil flowerettes for 3 minutes. Drain. 3. Melt butter (low heat) and add flour, stir until smooth. Gradually add 1/2 of the milk. Simmer 5 minutes. 4. Puree stems with milk. Add wine, flowerettes, herbs, salt and pepper. Simmer 5 minutes. 5. Add stock. Do not allow to boil. |
