2 Heads fresh broccoli
2 c. milk
1 stick butter
1/4 c. flour
1 c. chablis or other white wine
1 tsp. thyme
2 cloves garlic, crushed
salt and white pepper
3 c. Chicken Broth
Best Broccolli Soup
1.Remove flowerettes, peel stems and boil 3-4 minutes.  Drain and set aside.

2. Boil flowerettes for 3 minutes.  Drain.

3. Melt butter (low heat) and add flour, stir until smooth.  Gradually add 1/2 of the milk.  Simmer 5 minutes.

4. Puree stems with milk. Add wine, flowerettes, herbs, salt and pepper.  Simmer 5 minutes.

5. Add stock.  Do not allow to boil.
