Everyone loves Deviled Eggs.  Dot Com Recipes has compiled a list of Deviled Egg Variations found in message boards all around the web.

The number one ingredient, in any form is mayonnaisse or Miracle Whip.  Without this necessary ingredient, deviled eggs are desert dry and tasteless.

Mustard is a close second to mayo.  Mustard used can be yellow, dijon, or dried.  Dried mustard tends to have a very hot quality when mixed with vinegar.  Dried mustard is also much more bitter than the prepared varieties.

Paprika adds a slight peppery flavor, and is great for decorating deviled eggs.

Suggestions for add ins:
white, black, or cayenne  pepper
season salt
minced bacon
minced ham
minced green peppers
jalepenos
tuna fish
crab meat
shrimp
celery seed
pickles
rosemary
thyme
garlic
parsley
cilantro
capers
onions- green scallions, red, or vidalia
anchovies
wasabi
horseradish
blue cheese dressing (instead of mayo)
ranch dressing (instead of mayo)
sun dried tomatoes
cinnamon (This is the wildest ingredient that Dot Com Recipes found!)

To really throw guests or family members over the edge, beside your platter, present a small bowl of sauce for dipping such as ranch, salsa, hot sauce/Tobasco or guacamole.


Measurements vary from recipe to recipe, but the clue here is that deviled eggs should be moist, but not sloppy.  The consistency should be in no way lumpy.  Smashing with a fork will get most of the lumps out, but is time consuming and not as effective as a food processor or a blender.  A seive may be used, but then again, there is the time factor involoved.

For extra presentation appeal, when slicing the eggs in half, use a knife to make zig-zagged or curved lines around the egg.

To add more color to your deviled eggs to make them more appealing, line your platter or plate with leafy green lettuce or kale.  Shredded purple cabbage as a liner will make a bold statement, because purple and yellow are complimentary colors (colors opposite on the color wheel) and attracts the eye.  If you use color to enhance your dish, chances are the plate that you brought to a party won't get lost behind a box of crackers, but out front and center.

No matter what you choose to put in your deviled eggs, remember that these little treats are always a special event , and left overs are rare.
