Icy Shrimp Cocktail

8 peeled and deveined shrimp per person
1/4 c. red wine vinegar
1/2 c. lemon juice
2 tbsp. Old Bay seasoning
1 tsp. (or to taste) cayenne, white and black pepper
1 onion, diced
3 stocks celery, cut in half
3 bay leaves
1 tsp. season salt
3 cloves peeled and crushed garlic

Sauce:
1 c. ketchup
1 tbsp horseradish
1 tsp. lemon juice
1. Bring all ingredients, except shrimp and sauce ingredients to a boil.  Reduce heat.  Simmer for 20 minutes to develop the flavor.  Return to a boil.

2.  Add shrimp.  Boil 1 minute. Remove from heat.  Soak shrimp until pink, curled and firm.  Disgard any shrimp that is not curled.

3.  Drain, removing herbs and vegetables. 

4. Line a small plate with shredded iceburg lettuce.  In a circle, place 8 shrimp on top of the lettuce. Spoon a tablespoon or 2 of the sauce in the center.  Serve with wedges of lemon or lime.
