Buffet Ideas for Your Wedding

Every bride wants her wedding to be perfect.
But..........
These days, everything costs a hundred times more than you could have ever imagined.  Before you hire that expensive catering company, check out a few of our wedding buffet ideas that are elegant, easy, and inexpensive.

Tight Budget Buffet
Start with a vegetable tray.  Baby carrots, broccoli, green peppers, cucumber slices, and celery are relatively inexpensive when bought in bulk. You can buy a 24 oz. container of Tone's Ranch Dressing Mix (Just about everyone in the universe loves ranch dressing!) at Sam's Club or Walmart for about $6.00.  The whole container makes 10 quarts of dip.  Mix the powder with 2 qts. sour cream and 2 qts. mayo.
For an extra twist, add chopped spinach.

Chicken Wings and Mini-Meatballs.
Wings- Choose your favorite brand of BBQ sauce.  In a crockpot, place Chicken wings and sauce together.  Cook on low for several hours for melt in your mouth goodies.

Meatballs- Mix several pounds ground beef and ground pork, in equal amounts. Add one 16 oz. container of bread crumbs (or make your own in a food processor from day old bread), 1 cup parsley, 1/4 c. chopped garlic, 1/4 c. basil and one minced onion.  Roll meatballs about the size of a ping pong ball
Bake at 375 degrees for 20 minutes.  Drain.  In a crockpot, add meatballs and your favorite bbq sauce (or mix ketchup, brown sugar or honey, garlic and cayenne pepper to taste) and simmer for several hours.

Petite Cucumber or Chicken Salad Sandwiches
2 loaves of bread, (your choice) with the edges trimmed, or you can use a cookie cutter or drinking glass to cut out shapes.
Cucumber Spread:
6 cucumbers peeled and seeded
6 packages of cream cheese
1 red onion, diced
1/4 c. fresh dill weed
white pepper to taste
Mince dill weed.  Combine other ingredients in a food processor.  Pulse to mix. Spread on bread. Cut into four triangular pieces.  Arrange on a large serving platter.

Chicken Salad:
2 whole chickens, boiled with 1 bay leaf
2 c. celery
1/2 lb. walnuts
1 diced green pepper
black pepper to taste
mayo

The two menus above may be served with cracked pepper crackers.  Sandwiches may be made in advance.  Just butter each slice of bread before adding the filling.

Rotini Pasta Salad
1 large bag of colored rotini, boiled and chilled
your choce of fresh vegetables, parboiled
2 large cans of artichoke hearts, drained and diced
1 large can black olives, drained
1 tsp. minced garlic
1 tsp. oregano
1 tsp basil
2 bottles of your favorite Italian Salad Dressing

A Wedding Buffet with a Southern Twist

Oysters Rockefellar- A bit expensive, unless you live near a Coastal Town, but well worth the effort.  If fresh oysters are not available in your area, you can buy small throw away (or recyclable!) aluminium tins in interesting shapes at many grocery or discount stores.  And, if you find that oysters shucked (out of the shell) are too expensive, you can substitute just about any type of shellfish or fish that is inexpensive in your area.
