The crowning glory of Indonesian cuisine is the "rijstaffel."  It's Dutch name is a legacy from the opulent days of spice trading when the Dutch held lavish banquets.  Guests were seated at long tables on which elaborate floral and leaf decorations and large bowls of rice were arranged.  Sarong clad servants offered a selection of up to thirty dishes.  Curries, meat dishes, vegetables, eggs and salads and may kinds of hot, spicy & fragrant sambals.  Rijstaffel or rice table it has remained to this day an outstanding example of the diversity and splendor of Indonesian cuisine.

Oom Henk's Atjar Fish

Onions, Garlic, Ginger, Kemiri (Candlenuts or Macadamia), Vinegar, Salt, Sugar, Tumeric, Chilies, Fresh Fish

Fry fish in oil.  fry onion, garlic, ginger, and nuts.  Put mixture into blender, coarsely chop.  Heat a little oil and add spice mixture, sugar, salt, vinegar, coriander, and chilies and some water and cook a little.  The mixture should taste sweet-sour.  Add pieces of the fried fish  and cook until heated through

Mom's Kolak

3 or 4 Large Yams, cut into pieces. A few Cooking Bananas
1/2 lb Brown Sugar (to taste)
Salt
1 Can Coconut Milk
Canned Palm Seed (optional)

Cook yams in boiling water until tender add bananas, salt, coconut milk and brown sugar.  Simmer until bananas are soft then add palm seeds.

Noorita's Pineapple Shrimp Curry

2  Cups Coconut Milk
1  Pound Large Shrimp
3  Tablespoons Fish Sauce
1  Can Pineapple Chunks Drained
1  Can Crushed Pineapple Drained
3  T Sliced Green Onions
2  T Curry Paste
1  T Palm or Brown Sugar
2  T Fresh Squeezed Lime Juice
3  T Shredded Mint Leaves
Zest of One lime

Boil 1/2 cup coconut milk over medium heat, stir in curry paste, cook 5 min. stirring constantly, add remaining coconut milk to this mixture.  Add crushed pineapple, fish sauce, sugar, bring to simmer & cook for 3 min., add shrimp to the mixture, cook until shrimp turns opaque 1-2 min., add pineapple chunks, lime juice, 2T each mint and green onion,
ladle into bowl and sprinkle with zest of lime, onion & mint. 


Dave's Sambal Bajak

Red Chilies
Onions
Garlic
Shrimp Paste
Lemmon Grass
Salt & Pepper
Oil

Chop chilies, onion & garlic fry in oil with remaining ingredients, Simmer  with a little water.

Yvonne's Kueh Klepon

1 cup glutinous rice flour
3/4 to 1 cup coconut milk
1/2 teaspoon salt
24 small cubes of palm sugar or several tablespoons dark brown sugar
1 cup shredded coconut
pandan essence

Mix the flour, coconut milk &  pandan essence, adding the salt. The dough should be firm enough to mold without sticking to the fingers
