Cooking Techniques

Being as I'm not an expert I can't begin to give expert advice. Just what I've learned how to do, and short cuts if I know of any.

  1. Cooking Candy-hardball, soft ball stages
  2. High Altitude cooking- we are at 4400 feet, so high altitude cooking is a must.
  3. Humidity
  4. Beating, whipping, and blending
  5. Chopping and cutting
  6. Carving (ie turkey)
