Buttermilk Biscuits

1 ½ cups unbleached flour
1 ½ teaspoons baking powder
¾ teaspoons salt
½ teaspoon baking soda
½ teaspoon sugar
6 tablespoons cold unsalted butter; cut into small pieces
½ cup buttermilk
Preheat oven to 400º F. In a medium bowl,
sift together flour, baking powder, salt, baking
soda, and sugar. Using a pastry cutter or
fingers, cut butter into flour mixture until mixture
is crumbly. Stir in buttermilk. On a lightly floured
surface, knead dough until it is smooth (about 6
times). pat dough into a rectangle of about 1-inch
thickness and cut into 8 2-inch squares. or use a
2-inch biscuit cutter and cut 8 rounds. Shape any excess dough into an additional bisciut. Bake on ungreased baking sheet until biscuits are
golden brown (about 15 minutes. Makes 8 biscuits.
