This is the classic German shepherd color.  This is what
most people think of when they thing of a German
shepherd.  Rin Tin Tin and Jerry Lee  both sport the
classic black and tan color.

Black and red is in fashion in the German show ring
right now.  Some dogs have a very rich red pigment,
almost Irish Setter red!  Others are just slightly red.

Black and cream and black and silver are considered 'washed out'
colors.  Although not desired by the German shepherd standards,
washed out colors are not serious faults.

Sables come in many colors.  Sableing produces an agouti coat on
the dog.  Agouti basically means that the color of each individual hair
is multicolored.  It could be black at the base, then grey, then white,
then black for example.  The sable gene is dominant.  It can be
completely dominant (Sable and Black and Tan mating produces all
sable pups) or half-dominant (Sable and Black and Tan mating
produces some sable pups and some black and tans).

Black is the only solid color of German shepherd
recognized by both
the AKC and the
FCI.

These dogs are not albinos, they do have pigment.  Some
even have black noses and nails.  Although not a recognized
color by the AKC or the FCI, white shepherds are gaining
popularity.  Many white German shepherd organizations
hold shows for their white dogs.  White German shepherds
cannot compete in conformation with colored shepherds
but can compete in agility with them.  Some people are
trying to get white recognized as an acceptable color for the
German shepherd.  Others are trying to get them recognized
as a separate breed. 
Genetically, the white shepherd can be any color.  However,
the color is masked by the white.  The white dog can
genetically be a sable, a black and tan, or whatever.  You
can't tell though because the dog wears the white like a coat.

Like the whites, liver and blue dogs are not recognized by the AKC or the FCI.  Both colors have a gene that blocks the production of black pigment.  Liver colored dogs have liver colored nose leather and paw pads.  Blue colored dogs have blue nose leather and pads.  Both dogs usually have light colored eyes.  They can be many different patterns and can even be sable.
