2 bunches mixed greens, Collards, Curly Mustard, Red Swiss chard, washed and stemmed, or experiment with other greens, like Dinosaur Kale, and Dandelion greens
1 medium onion sliced
3 Tbl balsamic vinegar
1/4 cup sauvignon blanc wine
Salt & Pepper to taste
Wash and stem your greens. Use a deep skillet or wok. In a 1/4 cup of sauvignon blanc wine sauté onion for 3-5 minutes or until liquid is evaporated and the onion is slightly translucent. Add greens and cover for 3-5 minutes until greens are wilted. Remove from heat and add 3 tablespoons of Balsamic vinegar.
Option-Caramelize sliced onion by spraying pan with vegetable spray and sauté onion on a low heat for 8 minutes then add 1/2 tsp. sugar and cook for another 8 minutes. Arrange onion on top of finished greens.
