Here's George with our new vacuum tank. So far we've more than doubled the yield from this portion of the bush now that it's on vacuum
Here's our old Sugar Camp. It has been abandoned for 30 years. It had no power and no running water: So what did my grandfather do when it got dark? He went home! The sap would still be there in the morning!

Another of the old Camp. We've been tapping these trees for about 50 years! You can see the new 4-seasons vacuum tubing in the foreground.
Here's our sugar camp today. The logs in the foreground are next year's evaporator wood.

Marty and Andy have just finished setting up vacuum lines in a new section of bush and get ambushed by half-pint hooligans on the way back to the camp.
Installing new lines sure can make you hungry.  Andy found something to gnaw on.
Remember how we've said we run a wood-fired evaporator?  It takes a lot of work to get the fuel ready for spring.  That stuff doesn't grow on trees you know!
The new definition of a family gathering.  A couple of generations of Ennis(es) are on their way out to bring back 500 gallons of sap.
Ahh, the sweet result of our labour.  We're a little too biased to honestly claim we have the best syrup you can find anywhere ... but we did get a perfect 100% on our light grade syrup in the Perth 2006 Maplefest.  You can't go wrong with anything that good.
