Rolled Up Chicken  

1/2 c. butter
1 t. garlic
1/2 c. parmesan or asiago cheese
1/2 t. salt
1/4 t. pepper
3 T. dried parsley
boneless, skinless chicken breasts

Melt butter, add garlic. Combine cheese, salt, pepper and parsley. Dip chicken in butter and then into cheese mixture. Roll up chicken breast (hold in place with uncolored toothpick if needed). Place in shallow baking dish and pour remaining butter mixture over top. Cover with foil and bake 45 minutes to 1 hour at 350*. Can serve over pasta with pan drippings.
