Baked Acorn Squash Rings

2 large acorn squash

1 Tbsp. olive or canola oil

1/8 tsp. salt

1/8 tsp. pepper

2 Tbsp. honey

3 Tbsp. coarsely chopped pecans

Preheat the oven to 350 degrees. Halve the squash crosswise and scrape out the seeds. Cut into 3/4-inch rings. Brush the slices on all sides with the oil and arrange in a single layer on a nonstick baking sheet. Season with the salt and pepper. Bake about 15 minutes or until slightly soft.

Turn rings over, drizzle with honey, and sprinkle with pecans. Continue baking for about 20 to 35 minutes longer or until very soft.
