Herbed Potatoes in Olive Oil

2-1/2 pounds baking potatoes,

such as russets, peeled and thinly sliced

2/3 cup olive oil

2 Tbsp. minced fresh parsley

2 Tbsp. minced fresh chives

1 medium clove of garlic, minced

Salt and pepper to taste

Preliminaries: Preheat oven to 350 degrees F.

1. Soak potatoes in cold water to cover for 5 minutes, changing water once. In a large bowl, combine olive oil, herbs, garlic, salt and pepper.

2. Drain potatoes and pat dry with paper towels. Add to bowl containing the olive oil mixture, tuning to coat well. Spread in a 9x13-inch baking pan.

3. Bake 1 hour or until edges are golden brown and potatoes are soft.
