PORK CHOPS WITH SCALLOPED POTATOES

These are the best scalloped potatoes, and make a wonderful meal topped with pork chops. Of course, serve applesauce on the side for dipping!

3 tbsp. butter

3 tbsp. flour

1-1/2 tsp. salt

1/4 tsp. pepper

1 can (14-1/2 ounces) chicken broth

6 rib or loin pork chops

2 tbsp. vegetable oil

6 cups thinly sliced peeled potatoes

1 medium onion, chopped

1. In a saucepan, melt butter; stir in flour, salt and pepper. Add chicken broth; cook and stir constantly until mixture boils. Cook for 1 minute; remove from heat and set aside.

2. In a skillet, brown pork chops in hot oil.

3. In a greased 13x9-inch baking dish, layer potatoes and onion. Pour the broth mixture over. Place pork chops on top. Cover and bake at 350º for one hour; uncover and bake 30 minutes longer or until potatoes are fork tender. Yield: 6 servings.
