APPLESAUCE SPICE BREAD
Spicy, easy and lowfat! And in one more word: DELICIOUS!
1-1/2 cups applesauce
1 egg
1/2 cup sugar
1/2 cup brown sugar
2 tbsp. butter, melted
1 tsp. vanilla
2 cups flour
2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/4 tsp. salt
1/2 cup raisins
1/2 cup chopped pecans
1. Heat oven to 350º. Spray a 9-1/2x5-1/2-inch loaf pan with nonstick cooking spray.
2. Combine applesauce, egg, sugars, butter and vanilla in a large mixing bowl. Stir in flour, baking soda, cinnamon, cloves, nutmeg and salt until well blended. Stir in raisins and pecans.
3. Pour into prepared pan. Bake for 55 to 60 minutes or until bread tests done. Cool for 10 minutes before removing to wire rack. Yield: one loaf.
