Hearty Country Minestrone

1 lb. hot or mild Italian sausage links,

cut into 1/2-inch pieces

1 cup sliced fresh carrots

1 cups chopped onions

1/2 cup sliced celery

1 cup frozen corn

1 cup water

2 (14-1/2 oz.) cans ready-

to-serve beef broth

1 (14.5 oz.) can diced tomatoes

with basil, garlic and oregano, undrained

4 oz. (1 cup) uncooked small shell pasta

1. Spray large saucepan with nonstick cooking spray. Add sausage; cook over medium-high heat until browned. Drain. Add carrots, onions and celery; cook and stir 2 minutes.

2. Add all remaining ingredients except pasta; mix well. Bring to a boil. Reduce heat to medium-low; cook 5 to 6 minutes or until vegetables are tender.

3. Add pasta; return to a boil. Cook 5 to 10 minutes or until pasta is tender, stirring occasionally.

Makes 6 (1-1/2 cup) servings
