Zucc-guini with Spaghetti Sauce


For the Zucc-guini:
Peel the green off of two zucchini and cut the ends off.

Simply use a vegetable peeler and peel the zucchini into a mixing bowl, peel all around the zuccini until you reach the center seeds.

For the Spaghetti Sauce:
3 vine tomatoes
10 cherry tomatoes
3 peeled carrotts
1 small onion
1 bunch of scallion (finally chopped)
2 Tbs. of cold pressed olive oil
Italian Spice (to taste)
Sea Salt and Pepper (to taste)
1 clove of garlic pressed (optional)

Blend all ingrediants in food processor and mix well with zucc-guini.

This makes 2-3 servings
